Hi everyone, hope all well.

Does anyone have any good recipes for paleo vegetable or mushroom soups or variations of, am struggling to find any at moment.

Cook whatever veggies you would like in some chicken stock, then give it a zap with a hand blender Smiley

Add some herbs and spices if you want

my favorite soup is acorn squash and italian sausage soup.

roast acorn squash
chicken stock
some sage, salt and pepper to taste
Italian sausage
minced onion

cook the italian sausage and minced onion until sausage is cooked and onions are translucent. add the chicken stock and seasonings. mash the roasted acorn squash and add, stirring and bring it back up to a boil. cover and take off the heat. you can let it sit to let the flavors work their magic or you can eat right away. Bayleaves would also do well as a seasoning if you wish to simmer it Smiley
