so i recently tried soft tendon in my pho, I usually do brisket, round steak and tripe but i decided to dive into the soft tendon option... I am SO glad I did!! It is like meat jello, and melt in your mouth like the fat on a steak... absolutely marvelous!!  Soft tendon is an amazing thing. It kind of reminds me of head cheese.

just thought i would share my tendon adventure with everyone, it is so under-rated.  Cool
