I know it's carbohdyrates, but, am I better off eating carbohydrates that I actually make myself?
The only ingredients I use are a combination of durum wheat flour and all-purpose flour, water, eggs and olive oil for pasta, lard for tortillas, and yeast salt and sugar for pizza dough.

I realize these will make insulin levels fluctuate horribly, which is why I'm only eating them occasionally.

Yea, those would go under cheat foods.

I use to cheat with pizza or lasagna, now they make me feel so bloated and slugish I'm not tempted anymore.

Of all the grains, rice and corn are more benign, so I don't feel too guilty when I cheat a little with a couple good tacos or a Chinese dinner(no sweet and sour junk thou).

I would say the "best" carbs for OCCASIONAL use are rice and sweet potatoes. I avoid wheat at all costs because it makes me so bloated Sad
